Nizza, Monferrato, Piedmont, Italy
Aroma: Underripe green melon and the scent of fresh-baked honey buns.
Palate: Salty lemonade perkiness with a broad, oily, slick, and beeswax-like mouthfeel.
“Mille | Millilitri” bianco is destemmed before pressing, followed by 48 hours of skin maceration, then spontaneously fermented at a maximum temperature of 28°C and aged 7 months in 25- and 50-hl steel tanks. Malolactic fermentation is completed when it occurs naturally. The wine is filtered through a 10-micron filter, unfined, without bâtonnage, with the first sulfite addition made after primary fermentation or after malolactic fermentation, depending on the vintage.
