Le chill is rooted in the love for approachable and unique natural wine that the founders Adam and Nate have long shared . What was once a mere idea has grown into much more than a just wine label for the two. From hosting pool parties to late nights under a disco ball, Le Chill has created a space for everyone to feel at ease with a glass of wine in hand.

In collaboration with winemaker Chad Hinds, Nate and Adam curate small batch limited run wines using organic and biodynamic grapes grown in the Mt. Shasta and Rogue Valley areas. The dynamic nature of natural wine parallels the uniqueness that the two chase when formulating their varietals.

Tropical, crisp, breezy skin contact wine

60% Gruner / 30% Pinot Gris / 10% Muscat

Picked in mid-late September from a source in Oregon's Applegate Valley and the remote Mt. Lassen region of far Northern California. Grapes were fermented 100% whole cluster, 7 days carbonic followed by an additional 28 days with three gentle treadings per week to submerge and maintain the caps. The fermentation was then pressed into a combination of neutral oak barrels and stainless steel tanks, aged for 7 months sur lie. The other half of the grapes were sent directly to press to maintain acidity, and were aged in stainless steel tanks.
