A light red colour, a nose of wild cherry and very present candy. A mouth dominated by red fruit, associated with a beautiful freshness.
From a direct press of Gamay de Bouze and Gamay de Chaudenay (gamay with red juice, or semi-dye).
The grape juices are cold-settled, non-sulphurized. Subsequently, the alcoholic fermentation is carried out at low temperature (around 16°C) and stopped by the cold at 5°C when there are around 20 grams of unfermented sugar per liter.
