Vinification: Whole cluster pressed to stainless steel tank for fermentation. Aged in 25% stainless steel and 75% neutral oak for 5.5 months. Native fermentation, bottled unfined and unfiltered.

Tasting Notes: Notes of olive oil, lemon, lime, and underripe mandarine. Salty, fresh, and mineral. Light bodied.

Service and Food Pairing Suggestion: Serve chilled. Delicious on its own, or paired with tangy goat cheese or ceviche.
