Dark fruit and violets abound, but unless you decant or give the bottle some time, you may miss out. Reminiscent of Syrah from the far north reaches of the Rhône or Moulin-à-Vent in Beaujolais, this wine starts to show off its more animalistic and spicy side as it opens up. This could easily be a candidate for longer term aging with careful storage.

This wine was fermented very cool and slow in order to capture and preserve some of the more floral and fruit forward notes from Alicante Bouschet. Primary fermentation was in stainless steel with aging in both French oak and concrete. This wine was fermented by native yeast and bacteria and bottled unfiltered.
