Vinification: From our friend’s vineyard on the west side of Paso in Willow Creek, this incredible wine can be called a dark rose due to its maceration for 20 hours during the start of fermentation. The grapes were then pressed and allowed to ferment slowly for over a month in Italian Terrecotta Amphorae. The vessels were placed outside on the coolest of nights and mornings to slow down the rate of ferment. This slow rate and ability to breathe in clay amphorae captured the vibrancy of the Grenache and its terroir. Racked twice and bottled on descending moons. Ingredients: Well-grown grapes.
Analysis: pH: 3.27p | TA: 0.65 g/l | RS: 0.13 g/l
Tasting Notes: Vibrant ruby red. Wild huckleberry and thimbleberry jelly. Structure really perceives it to be more like a light red than a rosé.
