Cava, Spain

Organically cultivated Macabeo, Xarel-lo & Parellada from Catalonia. Vines are between 16-40 years-old planted in clay/limestone soils. Grapes are hand-harvested and directly pressed to underground concrete vat where spontaneous fermentation and a short aging takes place prior to racking and bottling. Sur lie aging in bottle for 15 months prior to disgorgement. Secondary refermentation kickstarted with fresh must. Unfined, unfiltered, zero dosage, ~20ppm SO2 at bottling.

fresh, creamy, yet mineral profile with fine bubbles, chalky notes, hints of toasted bread, stone fruit (like green apple), and Mediterranean herbs, showing tension and complexity from long aging, true to its organic, hand-disgorged, traditional Penedès style
