Organically cultivated Macabeo, Xarel-lo & Parellada from Catalonia. Vines are between 16-40 years-old planted in clay/limestone soils. Grapes are hand-harvested and directly pressed to underground concrete vat where spontaneous fermentation and a short aging takes place prior to racking and bottling. Sur lie aging in bottle for 15 months prior to disgorgement. Secondary refermentation kickstarted with fresh must. Unfined, unfiltered, zero dosage, ~20ppm SO2 at bottling.
