Listan Negro 2022 Bichi 'Listan'
Tecate, Mexico. Bichi Listán is a red natural wine made from Mision (Listan Prieto) grapes grown in the mountains of Tecate, right on the California border. The vines are centenarian and pie franco - which means ungrafted; they are dry-farmed and therefore yields are very low. The grapes are de-stemmed and fermented without temperature control in 450 liter concrete tinajas. After fermentation, half of the wine is put into stainless steel vats, while the other half is put into used barrels for about 3 months. The wine is bottled unfined, unfiltered, and just 10 ppm of added sulfur. Listan is light ruby and low-alcohol (12.5% abv), a very drinkable expression of the Mision grape varietals. Flowers, pepper, and red fruits on the nose, refreshing briny acidity on the palate.
