The 2021 Fitou Coupe Soif is a red wine blending 50% Carignan and 50% Grenache. Grapes are harvested as whole bunches from the same Domaine Mamaruta's vineyard in the Languedoc-Roussillon region in Southern France. The winemaking involves a short maceration of 15 days with only one or two manual pigeages and pumping over in a bucket. After a slow and gentle pressing, the wine is left to ferment in barrels for 7 months. Expect a medium-bodied wine with notes of dark fruit (plum, blackberry), spice (pepper), herbs (garrigue), and earth.
